Totally Delicious Chocolate Guinness Cake

This Chocolate Guinness Cake is quite simply, delicious! Rich, moist and full of flavour, you'll find it hard to resist an extra slice!
If hanging around in an overcrowded pub, waiting to get to the bar isn't your idea of a fun way to celebrate St Patrick's Day then we have just the thing for you! Create your own scrumptious Chocolate Guinness Cake to enjoy with friends and family! We're sharing our favourite recipe below;
Scrumptious Chocolate Guinness Cake
Servings - 10-12 Slices
Preparation Time - 15 Minutes
Cooking Time - 45 Mins - 1 hr
Cake Ingredients.
- 250ml Guinness
- 250g Unsalted butter - sliced
- 75g Cocoa powder
- 400g Caster sugar
- 150ml Sour cream
- 2 Large free range eggs
- 1 tsp Vanilla essence
- 275g Plain flour
- 2½ tsps Bicarbonate of soda
Topping Ingredients.
- 300g Full fat cream cheese
- 150g Icing sugar
- 2tsp Cornflour
- 125ml Double cream
Method.
- Preheat the oven to 160°C Fan.
- Grease and line a 9 inch springform cake tin.
- In a large pan add the Guinness and slices of butter and gently heat until the butter melts.
- Gradually whisk the cocoa and sugar to the Guinness and butter mixture.
- In a separate bowl beat the sour cream, eggs and vanilla together. Add to the pan. Finally whisk the plain flour and bicarbonate of soda and mix until well combined.
- Pour the cake batter into cake tin and bake for 45 minutes to an hour.
- Leave the cake to cool in the tin on a cooling rack. Once completely cooled, remove the cake from the tin.
- To create the topping gently whip the cream cheese until smooth, sieve in the icing sugar and cornflour and mix well.
- Beat the double cream to form a cream cheese like consistency. Add a couple of spoonfuls to the cream cheese mixture, gently mix and fold in the remaining cream.
- Finally, gently spread the icing over the Guinness cake, slice and enjoy!
I've tried quite a few Chocolate Guinness Cake recipes but my absolute favourite is the recipe above from Nigella.com, it's just lovely!
I've tried using flavoured beers to replace the Guinness and it works well with dark, tangy varieties! We've stuck to the original here but experiment with flavours, you won't be disappointed!
